INGREDIENTS
for 4 people
Cooking time 6-10 hours using a dehydrator
THE “DOUGH”
- 5 ripe bananas
- ½ freshly squeezed lemon
- ½ cup activated walnuts (soaked in water for 24 hours, washing them every 6 hours to avoid spoilage, if you do not want to soak them you can use them dry, but the value of their nutrients is much lower, and harder for the body to assimilate)
- ½ cup of water
THE CREAM
- 250 grams of cashew, pine nuts or macadamia nuts, your choice activated (soaked in water for 24 hours, washing every 6 hours to avoid spoilage)
- ½ juice freshly squeezed lemon
- 2 tablespoons of unrefined ecological honey or raw agave or Jerusalem artichoke syrup
- ½ – ¼ cup of Young Thai coconut meat
- ½ – ¼ tsp vanilla
- pink or lilac dragon fruit (½ or 1 fresh fruit or 1 tablespoon dried fruit in powder or 2 tablespoons frozen fruit) or any pink fruit you have, it can also be a red beet (just a piece) or berries, or it can be just a white cream it also tastes amazing but does not look as colorful.
- 2 table spoons of honey or raw agave
BERRIES
- blueberries or strawberries or raspberries or a combination of any of them
- optional: germinated buckwheat (soak raw buckwheat in water for 8-10 hours, rinse after 4-5 hours, rinse again after 8-10 hours and drain the water for them to germinate in 1-2 days, keep rinsing them every 6-7 hours, until the a little “tail” appears. This grain is very sensitive, if it is not rinsed in time, it will quickly deteriorate and the germination process will fail.)
“DOUGTH” PREPARTION
- Put all ingredients for the “dough” in the blender, at a medium speed, for 20-30 seconds until you get a homogeneous mass.
- Pour the “dough” on the dehydrator sheets forming round cakes of 12 cm each in diameter and 3-5 mm in thickness.
- Dry at a temperature of 38ºC – 40ºC (100ºF-105ºF) for 6-10 hours. The dehydration time depends on the thickness and the temperature. The most important thing is that they do not become rigid and remain elastic.
CREAM PREPARATION
- Put all the ingredients for the cream in the blender, turn on medium speed, and whip into a homogeneous mass.
ASSEMBLY
Put 2 pancakes in your favorite and beautiful plate, spread it with the pink cream, decorate with any berries and for a higher concentration of nutrients add sprouted buckwheat. Fold in half and your pancakes are ready!
STORAGE
Pancakes: can be stored in a sealed plastic bag, at room temperature and no longer than two weeks, storage in the refrigerator is possible for about a month.
Cream: store only in the refrigerator, preferably in a glass jar, no more than 6 days.
