STRAWBERRY ALMOND-MILK

Cooking time 5-10 minutes


INGREDIENTSfor 2-3 people

6-10 fresh strawberries (can be frozen too)

2 cups of almond milk (see recipe below on how to make it)

1-2 freshly squeezed lemon juice

1-2 dates (can be substituted for any other quality sweetener like: agave, banana, stevia, monk fruit, honey, etc.)

You can add some ice too if you wish (I personally wouldn’t)


PREPARATION

To prepare almond milk you will need 2 handfuls of fresh RAW almonds, (not toasted!) soak them in good quality water for about 12-24 hours.

It is best to rinse the almonds every 8 hours and fill up with water again until you finish soaking them. Once the almonds are ready, rinse for the last time and place them in a blender.

Add 2 cups of quality water and blend for about 30 sec.

Then, strain through a cheesecloth and pour the finished milk again in blender.

Finally, mix the milk with the rest of the ingredients, blend them again for about 30 sec and your strawberry almond-milk is ready!!!

From the leftover pulp from the milk you can prepare amazing hummus or just add to your soup or salad.
